Mango Chili Shrimp

This is a recipe that will be hard to keep on the table, so make sure you double it up if you know you’ve got shrimp lovers coming! The mango pepper salsa will bring just the right amount of tropical flavor in these chilly times. Enjoy this delicious gourmet appetizer!

Ingredients:

1 pound shrimp
1 clove garlic, crushed
1 pat of butter
1 mango, petite diced
1 red pepper, petite diced
1 yellow pepper, petite diced
Fresh chives, chopped
3 tablespoons rice wine vinegar
3 tablespoons honey
Salt and pepper, to taste

Directions:

Sweat garlic in a saucepan with butter.

Cook shrimp until tender, then remove from heat.

In a mixing bowl, mix diced peppers, onions, mango, honey and vinegar.

Season to taste and top shrimp with salsa and fresh chives.
