Breakfast time is the best time! This recipe for 3 Ingredient Berry Egg Muffins will blow your mind – it literally only takes three ingredients to make these filling, delicious muffins. The beauty of this recipe is the flexibility – feel free to substitute strawberries with any berries you like (a mix of berries would work well, too!)
Ingredients:
- 2 bananas
- 4 eggs
- Strawberries, quartered
Directions:
Preheat oven to 375 degrees. In a large mixing bowl, add in peeled bananas and mash them with a fork or potato masher.
Once mashed, add in eggs and whisk well to combine. Spray your (12 count) muffin tin with non-stick spray, then place a couple of berries in each cup.
Scoop in banana egg mixture over the berries and fill up the cup. Tap down the muffin tin to get rid of any air bubbles, then bake for about 12 minutes.
Remove muffin tin from the oven and allow to cool slightly before taking them out.
