Sometimes you have to take a bit of a break from high carbs, and take your health into consideration. Cauliflower actually can turn into a pizza crust that won’t make you feel ridiculously guilty!

This is a low-calorie, low-carb way to enjoy all your favorite yummy pizza toppings. It is super easy to make and you will be pleasantly surprised with how good it tastes!

Ingredients:

2 1/2 cups grated of ground cauliflower (use a cheese grater or food processor)
1/2 tsp dried basil
1/2 tsp oregano
1/2 tsp garlic powder
1/4 cup shredded Parmesan cheese
1/4 cup mozzarella cheese
kosher salt
1 egg, slightly beaten

Directions:

Preheat oven to 425 degrees.

Put all your cauliflower in a microwave safe bowl and cover it with plastic wrap. Puncture a few holes as vents, then place in the microwave for 4 minutes.

Take the cauliflower and scoop it into a mesh strainer, pressing all of the liquid out of it.

In a bowl, mix together the cauliflower, basil, oregano, garlic, Parmesan, and mozzarella, adding salt and pepper to taste.

Then add the egg to the mixture and stir it up.

Spread the mixture onto a piece of parchment paper, pressing it into a circle that is about 1/4 inch thick.

Bake it for 15-20 minutes or until the crust is golden brown.

Then all that’s left is toppings! Add sauce, cheese, pepperoni, or any other toppings you choose, baking for another 10-15 minutes until the cheese is melted.

Slice and serve your pizza, and enjoy the low carb option for your next pizza night!
