Baked Kale Chips

Everyone knows that kale is a mystical superfood sent by the garden gods to make us live forever… but still there is room to be surprised. With these crunchy baked kale chips, I’m not sure which part was more surprising: how yummy they are, or how easy they are to make!

Ingredients:

1 bunch of kale
1 tablespoon olive oil
1 teaspoon seasoned salt
Parmesan for topping, optional

Directions:

Preheat an oven to 350 degrees F. Line a non-insulated cookie sheet with parchment paper. With a knife or kitchen shears carefully remove the leaves from the thick stems and tear into bite size pieces.

Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.

Bake until the edges brown but are not burnt, 10 to 15 minutes. Garnish with parmesan cheese if desired.
